I'm looking at buying a fitness tracker for my 8-year-old. Fitbit seems like the obvious choice, and the Ace line is getting some good reviews for kids. I know it's "swim-proof" but does it actually track swimming? My kid is a competitive swimmer. It would be great to have this particular feature.

Welcome to the Fitbit Community, @Rainbowgobline.
I appreciate your interest in the Fitbit kids devices and would like to confirm that the Fitbit Ace 3 is water-resistant to 50 meters. For more information, see Can I swim or shower with my Fitbit device? It doesn't track swimming, but it tracks active minutes and has the option for the water lock setting. You can turn on the water lock setting when you're in water, for example showering or swimming, to prevent the buttons on the tracker from activating. For more information about the Fitbit Ace 3, see this manual. You can find more information about the Fitbit kids devices in How do I get started with Fitbit kids devices?
Hope this helps.
