If the screen of your Fitbit Ace 3 is looking grey and old, there are a few things that you can try to improve the display quality. Here are some steps that you can follow:
Adjust the brightness: Check the brightness level of your Fitbit Ace 3 and adjust it to the appropriate level. You can do this by tapping on the clock face, scrolling down to "Settings," and then tapping "Brightness."
Check the clock face settings: If you're using a clock face that has a dark background, it can make the display look grey and old. Try changing the clock face to one with a lighter background. You can do this by tapping on the clock face, scrolling down to "Settings," and then tapping "Clock Face."
Clean the screen: Sometimes, dirt, dust, and smudges on the screen can make it appear dull and old. Use a microfiber cloth to gently clean the screen and remove any smudges.
Restart the device: Sometimes, restarting the Fitbit Ace 3 can help to resolve display issues. You can do this by pressing and holding the button on the side of the device for about 8 seconds until the Fitbit logo appears.
If none of these steps help, it's possible that the display hardware of your device may be damaged or malfunctioning. In this case, you may need to contact Fitbit customer support for assistance.

As far as I can see the Fitbit Ace 3 doesn’t have brightness controls in settings on the device. It has a Dim setting but that doesn’t make a difference to dark screen on my daughters device
