I had over 10k steps yesterday but it's only saying 100. I didn't sync till after midnight. I'm guessing the daily data is wiped fresh from the device? I can't leave bluetooth and gps on 24/7 nor can I have it connected to my phone all the time either. Do I need to just sync before midnight

Fitbit trackers/watches will save data minute by minutes up to 7 days. There's no need for you to sync before midnight but it's recommended to do it at least once a day to update the Fitbit app's data. I'd like you to confirm that your Fitbit is syncing to your app to ensure all the data is transferring properly. Has this happened again? Is that day's data still showing only 100 steps?
