I was using the ECG functionality without problems for a long time until it started degrading to the point of not measuring anymore. Then, I tried to remove the Fitbit ECG app to reinstall it but upon removal all it did was delete it from the watch menu. Even so, the app does show up in the store (as being on version "1.0.2017.s" from 29 August 25).
I already tried resetting the watch multiple times and it didn't work, I also switched phones during this period and still never got it back to work. On the Fitbit phone app it always says that ECG is "on & ready to use". What else can I do? This was one of the main reasons I bought this watch.

Sorry to see you're having issues with the ECG app on your Pixel Watch 3.
Please share the steps you took to remove the Fitbit ECG app.
Did you try doing factory data reset on your Pixel Watch to see if that restores the ECG function?

Hey @RiekoC you mean the steps I took to remove the app in the watch, right? This was a long time ago so my memory is not that sharp on it anymore, but from what I remember:
I do believe the app was updated afterwards at some point but it never got back to showing in the app list.
As for the second question, what would be a factory data reset? I did a "Disconnect and Reset" from the settings in the watch

Thank you for providing the additional information, including the steps you used to remove the ECG app. Those steps sound correct. As far as I can tell, there isn't a way to completely remove/disable the ECG app, just uninstall updates.
When you tap the Play Store app on your watch and scrolled to Manage apps, do you remember if the ECG app appeared in the apps list for updates?
A factory data reset, which you tried, should have restored the ECG app on your Pixel Watch. You could try doing another factory data reset from the Pixel Watch app. This Pixel Watch help page (<-- click) has the instructions. If you do try this, don't use a backup. Sometimes, the backup file will contain the issue/bug and the problem will re-appear.

I tried doing this without any backup and still no difference. The version off the Fitbit ECG app on the watch is also the same I reported in the initial post. What else can I do?

I would have thought that doing a factory data reset without using a backup would have restored your ECG app.
I'm at a loss for any other troubleshooting suggestions. I'm going to ask around and see if someone else has a suggestion.

I just realized that I'm no longer sure what your issue is.
Your last post mentions "the version of the ECG app on the watch" Does this mean that you were able to get the ECG app to re-appear on your Pixel Watch 3?
Is your issue that the ECG app is no longer working? If it's this, by any chance, did you move to a different region/country?
