This is happening to me on Android on Motorola, but interestingly, there's a recent post about the same in the iOS forum.
The latest weight log was copied automatically to several days (not every day though) at midnight, the last ghost log appearing last Friday (today's Monday). I removed the ghost logs yesterday (the last one wouldn't remove though) but today they were back! I re-deleted and wonder if they stay away this time.
My Fitbit app connects to Lifesum through Health Connect, BUT neither app has an active permission to write or read my weight to/from the other app through Health Connect.
And the fact that the logs I deleted reappeared definitely points to an in-app error, not a problem in sharing data between apps.
Also, curious that iOS users are also experiencing these ghost logs.

I've seen that there are currently issues with weight and calorie tracking on the Fitbit side. There were recently Moderator posts acknowledging the issue. They confirmed that the team is aware of the problem and is working to fix the problem. However, we haven't seen a timeline for the fix.
If you haven't already done so, please submit this issue using the Feedback feature in the Fitbit app:
The feedback reports are received by the team for review. Although it's likely that you won't receive a response, we've gotten confirmation that the team reviews every submitted feedback report and uses the information for issue investigation.
