Is there a way to have Google Assistant still respond to "Hey Google" on my phone as well as having it available by pressing the button on my Sense? Sometimes I'd like a better result than a few lines of text, or to launch apps, etc.

Yes, this has nothing to do with Fitbit.
Google has been moving to Google Assistant and recently removed support for the old voice command.
Go to your play store, type in assistant and install.
If it still doesn't respond to Hey Google (I prefer Hey BooBoo, try a search with Google.
I'm moving this to android support.

Thanks. I did remove the assistant from the watch and the phone does respond again. I'll try reconnecting now and see if the behaviour repeats.
Strangely enough, I also say Hey Boo Boo. I've tried a number of similar variations on Google and Boo Boo seems to work best

Under Assistant settings, I keep finding the voice activate disabled.
This only started when I switched to assistant.
Try Egg Noodle, OK Pooper, , Say Google,
Of course Hey and OK are interchangeable.

I removed and added it again. This time it works.
My phone also just found some egg noodle recipes I might try.

Off topic a little, but I have an old iPod docked to a stereo system next to my TV. Watching a Youtube video, it responded to a guy saying "a serious lawsuit".
