Over the past 2 months, I've been running (with GPS) between 20-30 km a week. My resting heart rate went from 68 to 55, I've lost 5 lbs, and I've been getting more sleep. Despite these changes in my health, my cardio fitness score has not changed at all in the past 2 months, and I'm not even sure if it was up to date 2 months ago.
Is there something I have to do to get my cardio fitness score to update? I've been using the Charge 5 and the Android app.

It sounds like you're doing the right things. Fitbit support will suggest restarting your Charge 5, and/or clearing your app cache, etc. Here is a link to Fitbit's page on the cardio fitness score:

I cleared the cache in the app and restarted the watch, and my cardio fitness score still isn't updating after a GPS tracked run.
Is there anything else I can do to?

Two thoughts.
Also, is your weight entered correctly?

My weight is up to date, however, I did notice it mentioned an old weight loss plan in the "Learn More" section of cardio levels.
I've deleted and reinstalled the app. I've been doing 5k runs on the same path each time. I'll test out doing a mile tomorrow.
I'll report back with the results.

I've deleted the app, reinstalled the app, restarted my charge 5, ran 1 mile tracked with GPS 2 separate times, and it's still showing old information on my cardio fitness score page.
I have a goal to lose 15 lbs, but it shows a goal from a year ago to lose 7 when I scroll through the "Learn More" part of the cardio fitness section. The cardio fitness score itself hasn't updated at all.
Is there anything else I can do?
