I am using the surfing activity to track surf foiling on the Pixel watch 4. When I end the activity on the watch - in the activity summary I see maximum speed. Whereas when viewed afterwards in the phone app I only see average Speed.
Is there any way to see the maximum speed again?
Is there anyway to stop is recording arbitrary 1km laps?

I moved your post from the Charge 6 forum to the Android app forum since that's the device you mention in your post and there currently isn't a product help forum for the Pixel Watch.
I don't know of a way to see your maximum speed in the Fitbit app for a completed activity. I agree that it doesn't make sense to have this information tracked by the Pixel Watch 4, but it's not available in the Fitbit app.
You can submit a feature request in the Product Feedback forum (<-- click). I understand that the developers monitor this forum to see what features are being requested for potential future implementation.
When you submit your feature request, please consider replying to this thread with a link to your request so that other users can add their votes & comments.
You can also use the Feedback option in the Fitbit app to make feature suggestions and report issues.
The feedback reports are received by the team for review.
Lastly, there's going to be a Public Preview for an updated Fitbit app that utilizes an AI coach. Although I haven't seen confirmation of this yet, the AI Coach might be able to review the activity data tracked by your device and tell you your maximum speed when you ask. From what I understand, Public Preview of the Fitbit app with AI Coach is supposed to be opened to users soon. I'm looking forward to giving this updated app a try.

I remembered something else that might help.
The Pixel Watch 3 has a feature wasn't widely publicized based on what I saw. The Pixel Watch Assistant has the ability to do limited search of Fitbit data. You can ask questions, like what was my total step count for this week and the Watch Assistant would provide the answer.
I just checked this on my Pixel Watch 4 and it worked! Gemini provided the total number of steps that I've done this week so far.
It might be worth asking Gemini on your Pixel Watch 4 what was your maximum speed for your activity.
Let us know if that worked for you.
Just to let you know, I don't do water activities and don't know how to get it to stop recording arbitrary 1km laps.

As @RiekoC @as mentioned, there isn't a Pixel Watch 4 board in this community and therehore we don't have a thread that better fits this thread. That's the reason we decided to move it Platform board. We appreciate your understanding. Instead, you could create a thread in the Google Pixel Watch Help Community.
On the other hand, the suggestion from @RiekoC is very accurate. You can submit a feature request in the Product Feedback forum because the Pixel watch has those features in regards the speed stats but the Fitbit app displays stats more oriented to pace, and distance.

Same problem here.
I have pixel pro 8 and pixel watch 4.
Running latest versions Fitbit apps.
Keen to see max speed on the phone app.
