I just started going to the gym and doing strength training with their weights and machines. I have a Garmin Forerunner 745. Garmin, of course, is explicitly catering to activities, fitness, working out, etc. They have a very full suite of tools to track sets, reps, and structured workouts. I really only used my Garmin for strength training about two weeks, before I got my new Pixel Watch 3.
I understand the the Pixel Watch 3 and Fitbit is not currently directly competing with Garmin in "strength training," "weights." etc. I hope someday that comes, and that other apps support it.
My questing is with my new Pixel Watch 3 and the Fitbit app what is the fundamental current ability for monitoring or tracking strength training. Talk me through getting the most out of Fitbit and PW3 for going into a gym and doing a short and simple weightlifting routine. What would I do, what does the PW3 do?

I think you've already got it right. Fitbit isn't a serious workout system like Garmin. I use Fitbit and Pixel Watch 3 to track my resistance (weight) training. But it really just tracks the HR and calories burned (and completely disagrees with our Tonal about calories burned even though the HR source for both is the PW3). When I start a resistance workout on Tonal, I connect the PW3 to it for HR and on the PW3, I start a "weight lifting" exercise. (Confusingly, PW3 and Fitbit also have Powerlifting and Strength Training besides Weightlifting). It then tracks in Fitbit the time the workout took, the HR during it, and the calories it has calculated. It doesn't do the other things you were looking for like sets and reps. You aren't going to get that with Fitbit.

Yes. The data ecosystem is a mess.
All the other PW3 activities without GPS (I've only tried weightlifting, indoor rowing, and walking.) sync to MyFitnessPal, but not to Strava.
