At the moment the weather app chooses whether to display Fahrenheit or Centigrade based on your profile settings. If you have your distance units set to kilometers then the weather app will use Centigrade, if your distance units are miles then the app will use Fahrenheit
There is a feature suggestion to allow us to choose which to use in the weather app. If you'd like to vote for it you can find it here: https://community.fitbit.com/t5/Feature-Suggestions/Enable-Celsius-units-on-weather-app-without-havi...

Sort answer is: you can't change from Fahrenheit to Centigrade in the weather app
You would need to change your distance units from miles to kilometers meaning all your distances on your fitbit dashboard would be changed to kilometers. There is currently not a way to show your distances in miles and have the weather app use Centigrade.
If you'd like to be able to do that then voting for that feature suggestion I linked to will help.
If you are happy to have your distances in kilometers then go to https://www.fitbit.com/user/profile/edit
Then click on "units", then change the "length" unit from "feet/inches" to "centimeters". Click the "submit" button at the bottom of that page and then sync your versa so that the change is copied across to your fitbit.
