I know a lot of persons have that problem and it has been going on for months and now unfortunately I am one of them.
I used to sync my Charge 3 with a Xiaomi Redmi 4X (on Android 7.1) and it was working fine. I got a Moto G8 Power with Android 11. I was able to sync the Charge 3 for a couple of days with that phone but now it is not working at all.
I have tried the various "solutions" that I found on various forums : removing and then re-adding the device from the account, logging out of the Fitbit app and re-logging in, uninstalling the app and re-installing it, turning on bluetooth scanning, ... I have restarted the Fitbit device and phone I don't know how many times. I even reset the Charge 3 (and lost one day of data). All that to no avail. I have to use my old phone to be able to sync my data to Fitbit.
Strangely enough, After I synced with my old phone, I can sync once with the new phone but the next day it is back to the old phone to be able to sync.
I don't know if there is something to fix on the Android side or on the Fitbit side but it would be nice to have a definitive answer (and solution !) on what the problem is.

Hi, @jhotterb sometimes if you have two different devices that you sync with, they can interfere with each other and cause syncing problems. Could this be happening in your case? If your old phone is turned on and in range when your new phone is trying to sync, that could be causing the difficulty.

I ran some more tests.
Syncing with old phone: Jul 14 13:15 ok (phone is then turned off)
Syncing with new phone: Jul 14 13:45 ok, 14:45 ok, 16:00 ok, 18:30 ok, 21h30 ok, Jul 15 7:00 fails
Syncing with old phone: 7:30 ok
Syncing with new phone: 8:00 ok
Note: I turn Bluetooth on before syncing and off after.
So Fitbit can sync on Android 11 if the interval between two syncing is not too high. Il looks like it works if there is not too much data to sync and it doesn't have time to fail (I'm only half-kidding). Of course, it doesn't help if you go on a full day (or multiday) hike in the middle of nowhere with no Internet connection.
Now that Fitbit is part of Google you would think that it would make it easier for them to work together.

I tried again to sync (with my Android 11 phone) at 14:00 and it failed so it looks like the interval where it starts to fail is between 3 and 6 hours (for my phone and my device).

Make sure Bluetooth is turned off on the old phone.
In those three to six hours, are you deprecated from the phone for long periods of time?

The old phone is completely turned off when I try to sync with the new phone. I'm not sure what you mean by "deprecated", @Rich_Laue .
