What does the "minutes" on the Android Fitbit dashboard show?
Is it the number of minutes spent on activities?
If so, why does the number of minutes shown in the screenshots below differ?
On the dashboard, it showed 270 minutes, but if you total up the number of minutes that is listed in the Walk activity for Sunday (3 March), it is 227+10+49+87 = 373 minutes.
Why is there a difference of 103 minutes?

@chuacwWelcome. You are comparing different numbers.
Fitbit has calculated your activity on Sunday you had 270 minutes of active minutes which are periods of >= 10 minutes where your calories burn was 3 times your BMR/Resting calories/minute..
If you look at your activity log on the PC for your daily activity you will see graph bars in 5 minute spikes which represent this activity.
