Correct - to sync your tracker, an Internet connection is required. (BT sends info to phone, then phone sends to Fitbit.com via Internet, then shows in APP)
You can still view your details on the blaze itself - with the exception of a few details (like active minutes)

It seems that if you absolutely need to sync your tracker in Peru, then you have to take your phone off of airplane mode until it is synced, based on the fact that you can't sync while on airplane mode. Probably something about airplane mode limits the app's functionality, causing it to not work correctly. In the mean time, your watch will continue to track data and once you are back home you can sync it all then. You can always try chatting with fitbit support to see if they have additional ideas or if you want to verify that the phone needs to not be on airplane mode.
