From the fitbit side, your Blaze will work quite happily without your phone's bluetooth being on and can store up to 7 days data between syncs. So, you are correct, you only need switch bluetooth on when you want to sync and don't need to have it on all the time.
Having bluetooth on will use phone battery but it will only affect your Blaze if you have the options set to always connected or all day sync.
Not sure what the problem is with Amazon music. I would have thought that it needed wifi or data services to be on rather than bluetooth unless you are using bluetooth connected headphones or speakers.
