My watch has been on charge all day but it has recorded 1309 calories burnt. How can this be when the watch has been sat on my kitchen worktop.

That is certainly correct. This is what you burn all day if you were laying down. I bet if you wore the watch, the number would have been higher. I guess by the end of the day, it will tell you on how many calories you need to eat.

The calorie burn you are seeing is the result of your Basal Metabolic Rate (BMR), which is the rate at which you burn calories as a result of maintaining vital body functions. These functions include breathing and heartbeat and brain activity, among others.
When you created your Fitbit profile, you entered your gender, age, height and weight. Your profile and tracker use that data to configure your daily BMR.
