Can't get fitbit set to correct time. Especially concerned because next week we go on DST.

I am glad to see here that your timezone inquiry has been resolved. Now about syncing, I recommend taking a look at the How do Fitbit devices sync their data? article to have more information about how you can sync your Blaze.
But an easy way to do it, is going to the Fitbit app, tap the Blaze icon and tap Sync Now. Just make sure that you have internet connection and your Bluetooth is on.

Welcome to the forums!
On the computer: Go to the Dashboard and click on the gear and choose settings from the drop down. Scroll down to time zone Change it to s different one. Sync it. Go back in and change it to the correct one and sync again
Phone: Click on account upper top right looks like an envelope. Scroll down to advanced settings and do the same as above
Device will need to sync before it changes

Regarding your question, if your tracker is showing a different time maybe it needs to sync. To more information about syncing, you can check the link I provided in my previous post.
Now to manually adjust your time, you just need to do the following from the Fitbit app:

Hi, I had the same problem but when traveling. The Fitbit would not change the time whenever I synced the tracker. I followed your steps and it had told me ‘you are ineligible for a Fitbit account’ whenever I would want to change the time zone.
