Now that the weather is nicer and I am on my kayak and paddle board more, what do you think would be a good option to choose for my workouts? I don't see and "other" option. For activities like this, I'd like to be able to track my distance as well.

It's great to see you around @tGianni. If you want to log a random activity, you just need to do the following from your Fitbit app:
1. Tap the "+" icon
2. Tap Track Exercise
3. Enter the name of the exercise and the information required
4. Tap Log It
5. Sync

I am not seeing that on my app - If I go to exercise, there is a stopwatch with a + in the upper right corner - when I click that, the options I get are run, walk or hike.

You don't need to tap the exercise tile @tGianni, as mentioned you just need to tap the "+" icon, this icon is right there on your Dashboard, once you tap this just follow the rest of the instructions. But if you prefer to tap the exercise tile do the following:
1. Tap the exercise tile
2. Tap the stopwatch icon
3. You will see many option but just type the exercise you want to log
4. Tap Log It
5. Sync
