Actually the watch updates from your phone. You can go to Account on your app, then advanced settings, then make sure your timezone settings are accurate. When I fly to other timezones, I sometimes open the app to make sure the app (using phone time) and watch are synced up and on the same time zone again if they haven't updated automatically.
