Is there a setting where instead of my Fitbit buzzing for a notification, it both buzzes and lights up? I'd prefer to just look at my wrist to read a text rather than feel the vibration and then have to press the button to see it.

Regarding your question, yes, you can turn on the "Quick View" option to see your notification, you just need to raise your hand to do it. To active the quick view, you need to swipe to settings and select "On" on the quick view feature.
