I am thinking getting a blaze. I have a question though. Does it show the time all the time? like a regular analog watch ?

It certainly does.
Currently, you'll have the choice of four clock faces to choose from.
You might have to tap the screen to "wake up" the display but all the faces feature the time 🙂

To add to what @SunsetRunner said, it doesn't really stay on all the time but you have the QuickView feature which makes it show the time whenever you turn your arm towards you. If you disable QuickView, you will need to press any button for it to show the time and will remain on for 10 seconds.

The gesture works great. If experiencing problems, the trick is to have the forearm kind of close to being parallel before twisting the wrist. Experiment a little, you'll get the hang off it.
