I have had my FitBit Blaze since Christmas, and my Galaxy S7 since before that, meaning I have only used it with this phone, and it has always worked like a charm.
The problem, is that this morning I updated the firmware on my Blaze, and now it no longer pairs with my phone. The "Bluetooth Classic" pairs, but the other bluetooth does not, meaning it won't sync to my FitBit app to update my tracker. It's different type of bluetooth obviously.
For the most part, the Blaze does not show up in my bluetooth list when I scan for it. The only time I can get it to show up, is after disabling then reenabling the bluetooth on the Galaxy S7. Sometimes even that doesn't work unless I also reset the Blaze. Once it finally does show up, I try to pair, but it gives me the notification "Pairing rejected by Blaze".
Things I have tried, to fix this (in order):
1) Unpaired Blaze from original remembered pairing
2) Disabled/re-enabled paired/unpaired bluetooth classic, played around to see if that would help
3) Paired Blaze to my laptop (worked, but didn't help anything)
4) Updated firmware on Galaxy S7 (didn't work, and now I have adjust to a new phone UI)
5) Reset Blaze and phone at least a dozen times
6) Searched for help with this issue, but found nothing less than a year old that matches my problem
Can I just roll back to the old firmware on the Blaze so I can return it to full functionality? It's too late to return it, and I don't have the original wristband or box anyway.

Oh, I also tried uninstalling/reinstalling the FitBit app on the phone several times throughout those other methods.

I have the Note 5 and the same thing is happening to me. Hasn't synced since Monday and I didn't even update the firmware as far as I know. I'm so mad right now!

So mine just literally fixed itself. I manually went into my phone to see if I had an update. There was one there so I updated my phone and when my phone came back on it automatically synced with my Blaze.

@GKChase I see you have unpacked the tracker from the phone, this is a good step.
As for trying to pair it, this is not your just, but the responsibility of the app. Stop searching for it in the phones Bluetooth settings.
In fact your phone does not need to be paired to sync, but o ly to use notifacations and its services. Hopefully you have not complicated things by removing the tracker from your Fitbit account.
Let's do a shutdown of both the phone and the tracker. This is done through the settings menu on the Blaze. Now try a sync. With a successful sync and if notification services are running the tracker should get paired

I just updated the firmware on my blaze and the sync just stopped. After trying reboots and unpairing Bluetooth, I eventually got a vibrate from the blaze and a green tick.
Seems the firmware update took its time and no pairing could happen while the firmware update ran on the blaze. My shutdowns in an attempt to fix it only restarted the firmware upload process each time and so it took longer than normal.
Top tip, wait for the green tick on the blaze before trying to re-sync it to the app...
