Fitbit starts at zero at midnight.  It uses your stats (gender, age, weight, height) to estimate your Base Metabolic Rate (BMR) which is the calories you use just to stay alive (maintain temperature, breath, heart beat). 300 calories in the morning seems OK.  My BMR is around 60 calories per hour so at 5 am I would have burned about 300 calories since midnight.  You can check the estimate by looking in the internet for BMR calculators.  The software continues to estimate and add BMR calories even if you don't wear the unit.

As for the steps, not sure what is happening.  You can try restarting your unit to see if this clears it.  Restarting instructions here. Try restarting a couple of times to make sure the software clears properly.
