Can you change the setting to just see a preview notification for text messages instead of the full message?

It's great to welcome you @Alexiaaaaa. Regarding to your inquiry, no, there isn't an option to see only a preview of the message you are receiving. But if you have an iOS phone, there's an option to select if you want to see the message and sender or just the name of the sender.

 

If you want to see only the name of the person that is texting you, from the Fitbit app, tap the Blaze icon, tap notifications and there select which of these two option you prefer.
