Is there a way to set the screen so it's on all the time, like a watch? I don't understand why it has to go dark after only 5 seconds.

Nope.  Fitibit doesnt offer this feature as it will kill the battery pretty quickly.  I believe there is a feature request for this though.

The Blaze display times out like every other watch on the market, except one, that has an LED display.

Currently if you use the Chronograph clock there is a quick start stopwatch that will stay on until the battery dies.

Most watches use Liquid Crystal displays which use practically no power, or E-paper that uses no power once the display has been drawn. However both use the rooms light and doesn't generate any on their own.
