Hi there @Cinniman_swirl. Good to see you in the Community!
Currently, you can in fact choose a calorie goal by going to the account section on your dashboard, then go to the Goals section and then tap on Activity. Here you will be able to update your calorie goal but this will always include your exercise activity as there's no way to keep them separated because your calorie burning relies on your activity.
Let me know if you have any other question.

@Cinniman_swirl You might want to create a My Fitness Pal account and track your food calories there. You can link your Fitbit account to it. This is what I do and my Fitbit steps come over to MFP account as exercise calories earned. You can then decide on your own if you want to stick to the calories MFP set for your goals or eat back some of your exercise calories.
Hope this helps!
