Work nights - due to lack of sleep during the day have a tendency to let Fitbit totally die so when recharged, the time is always way off by many hours and minutes. Even after re-syncing, the time is still off the same amount. I have tried everything to fix this many, many times!! Uninstalled, reinstalled, turned on, turned off, downloaded, turned bluetooth on, off, paired etc, etc, etc!!! Somehow eventually something resets it and I am happy until it dies again and the whole process starts all over again. Nothing I did last time fixes it this time!!! I probably would have taken a hammer to this thing but my daughter bought it for me so I haven't!! Had to wait a year to set it up because my phone or computer were incompatible with it (this took me awhile to figure out!!) so went out and bought new ones and still had problems getting it set up!!! I want to scream!!! Am I the only one having these problems??? Would a doggle (which did not come with this watch) fix this??? Shouldn't the time be correct if it syncs to the app and it has the correct time???

The time should be correct if the device you are syncing with has the correct time. if it is off exactly 1, 2, 3, hours etc, make sure you have the correct time zone in your account settings.
PS: Allowing a lithium ion battery to completely discharge can permanently damage it.

You say you let the tracker always die before charging, if the battery is dead the clock has stopped and yes the time will be off when the tracker turns back on.
Of course letting the battery go completely dead will start shortening the time between charging.
