So you can track both "martial arts" and "kickboxing" which makes so little sense if the charge 5 only has like 10 different activities to track.
What about sports way more common like
-basketball
-inline skating
Which ones are you missing? This should be easy add imo...

And "If your exercise isn’t included, choose Workout."
If you do choose 'workout', you can later change the name to something else.

Just adding to what @JohnnyRow said, you can also start an exercise and then choose a category for it afterwards. For example, I have weights as a shortcut and I later change the name to Body Pump (which is the class I do). I just had a quick look at whether your options show up in the list when you do that. They have roller skating and basketball (not specifically inline skating).
I use the automatic exercise recognition feature for my gym classes. They come up as aerobic exercise. After the class, I go back in a rename them and edit the start and finish times slightly as it doesn't think you're exercising when you're doing the cooldown track.
It's not super-easy but I haven't really had a problem with doing it that way myself. I had the One for 6.5 years and has to log absolutely everything manually so I guess I was trained well to just do it...
