My active zone minutes will randomly jump up into the hundreds. Also, the fitbit will register an exercise that I am not doing at a time I could not be doing it

Thanks for the details shared in your post. I understand your concern and would like to advise that you earn Active Zone Minutes for time spent in the fat burn, cardio, or peak heart-rate zones. You earn 2 Active Zone Minutes for each minute you’re in the cardio or peak zones, so it's possible to earn more Active Zone Minutes than your workout time. Heart-rate zones are personalized based on your fitness level and age. For more information, see How do I earn Active Zone Minutes?
Regarding the issue with exercise tracking, please let me know what type of the exercise you device is registering and if you're doing a different exercise during this time. Have you tried to edit the type of exercise: How do I edit or delete an exercise or activity in the Fitbit app? I will be glad to investigate further.

The withdrawal of the 15 minute step recording facility in August 2021 is a massive backward step (excuse the pun) & the lack or response from Fitbit after 4 - 5 years of using the product has been exceedingly disappointing & in fact exceedingly poor. You do not expect to suddenly lose a useful part of tghe app then discover that Fitbit themselves have no idea how the change was made.
Very, very poor.
