Thank you for all the information that you've shared about this inconvenience with your Charge 5.
I noticed there's an idea posted in the Community forums about removing this notification, so please make sure to vote for this suggestion and add your comments as well. This section is regularly reviewed by the team of developers.
If you haven't done so already, please try going to your phone's settings > Applications > Fitbit app > Notifications > Toggle off the Incoming Call option (the instructions to get to this option may be different depending on your phone). In addition, you can try disabling the notifications completely and set them up again.
