Charge 5 won't track my sleep times accurately

There is one thing that really irritates me about the sleep tracking. If you go to bed at a normal time let’s say 9 or 10pm but if you wake up before midnight and your awake for a bit and fall asleep again after midnight it counts those times to the night before. 

is there any way to change the setting so it counts to the piper night?

So I can properly assist you, I'd like to understand your post a bit better. Did @RiekoC's post answer your inquiry? Would you mind giving more details?

If your concern is that your sleep details are showing in today's history, please note this is a normal behavior. As an example, yesterday I went to bed around 8 pm and woke up today at 3 am, so my tracker recorded my sleep during 7 hours (4 hours from yesterday and 3 hours from today), once I synced my Fitbit device the sleep was showed up on today's history since I have sleep from today (the 3 hours), which is the correct way to show the sleep data on your Fitbit dashboard. Is this what you're referring to?

On a side note, bear in mind that your time asleep is calculated by subtracting your time spent awake and restless from your overall tracked sleep time. For example, if you slept 8 hours but woke up 2 times for 15 minutes each, your time asleep would be 7 hr 30 min.

Hopefully, I'm understanding your question correctly.

If you are asking about how to have your sleep after midnight count for the next day instead of your previous night, you can edit your sleep log in the Fitbit app. Edit your sleep log with the time you woke up after midnight. Then create a new log from the time you feel back asleep until you woke up. Just be aware that you need at least 3 hours of sleep for your device to track sleep stages and give you a sleep score. 

When you edit your sleep log in the Fitbit app, it may take some time for the app to update your sleep stages & score. I usually see my updated sleep log with stages & score around a couple of hours after I edited it.
