I hope that I get a response, so far going through calling has resulted in asking to do a survey. No actual results.
My issue is that I want to see ONLY my heart rate and duration while I am walking, working out, on a treadmill or, you get the picture. This is not the case choosing any of the exercise options. Heart Rate will show up till I get to a heart zone and then it doesn't come back. I do not need to know my steps while walking, it is not like I will say, "Oh wow, look how many steps I have taken!" Same goes with calories, fat burn, etc.
I want to see how much time I have been doing the exercise and my heart rate. I can tell by my heart rate if I need to push more or chill a bit.

You have to swipe up from the bottom on the exercises to turn off Heart Rate Notifications on the exercises so you can see the numbers without interference from the zones, but you do still see Zone information with the heart rate during exercise. That might be what you’re seeing.
I have Always On when I do weight training and I've noticed it shows both the BPM and which Zone I'm in at the same time.
I just tried a quick simulation with a Workout and took a picture.
The number in the middle of the screen over the heart is the BPM and the little arrow at the bottom helps you to cycle through the various stats so if the heart rate goes away, you can get it back.

I’m not from Fitbit and this community is basically customers helping customers, but here’s a response anyway.
Do you want to get rid of the Heart Zone Notifications? If so, you can do that by scrolling down from the Clock Face screen on your Charge 5 until you get to Settings, tap, then scroll up until you get to Heart Zone Notifications and you can toggle them off. Make sure you keep Heart Rate On though.
Unfortunately it’s impossible to lock a screen during Exercise right now, but if you tap the little white arrow at the bottom of the screen during an Exercise you can cycle through the stats until you get to Heart Rate and it should stay there (if your sleeves don’t interfere with the screen).
I use that screen when I’m jogging because I’m most interested in that stat. Recently there’s been more interaction with my sleeves (maybe because of static electricity because it’s winter) and the stat often switches to pace. It’s annoying but only takes a couple of taps to bring it back.
Also, here are some Feature Suggestions for locking the screen during Exercise that would be good to vote for, if you’re interested.

I already tried turning off the Heart Zone Notifications but ZONE info still comes up regardless of the exercise I am doing. I will see if the info you provided regarding the static from a shirt could be an issue. I have tried different exercises and it seems for what I want, Golf gave the fewest options to tap through to hopefully get to Heart Rate. Thank You Wibby and FITBIT, make a way for us to customize what we want or don't want on exercises.

You can also double-check Zone Notifications are switched off during Exercise too by pressing Start on any Exercise on your Charge 5, then if you tap the little white arrow at the bottom of the screen, it brings up a menu for that exercise. You can toggle off Heart Zone Notifications there too.
I don't get any of those notifications during the day or when I jog, so it does seem to work. After a Firmware Update it set itself back to On and I had to switch it off again (once I worked out how to), so be prepared to check in that case.

Hello Wibby, hope you are doing well today.
I did everything you suggested. When I first started off with any of the exercise options, I had heart rate but when it didn't come back, even with repeated tapping. Actually, it came back once, flashed and went to the next screen. I still had the zone min display that I wish would go away. I am going to reset and try it one more time. If it doesn't work after reseting the options as you suggested, back to the store it shall go. Maybe I will look for the Charge 4. Have a good day and Thank You!

I reset the device and once I went into an exercise, Heart Rate was there but gone when fat burn was displayed. Lots of taps to get to heart rate and sometimes, not at all. While sitting down and typing this (not exercising) Heart Rate is showing, no fat burn. I wish I could turn off or edit fat burn so it doesn't display.

I finally figured it out and I feel rather dumb! I shall not indicate what I was looking at but I am A OK with the device. So, thank you for your replies and they were helpful for getting me in a better understanding how to use my device.

Well, maybe I am still not totally understanding one thing.
Heart Rate on any exercise goes away usually when my BMP is 104+ and after 2 - 3 minutes. The device then gives me Fat Burn and then Heart Rate doesn't like coming back till I have finished my exercise. So, is the number shown on Fat Burn actually my Heart Rate? I think it is based off of the numbers.
