Hi I'm looking for a handlebar device (bicycle computer) to synch with my Charge 5 in real-time to pause my work-out by pressing a button when stopped rather than having to take off my gloves and pull-up my sleeve every time. Is there such a thing on the market?

No. No Fitbit can do that (in fact, Fitbit supports no external connectivity to sensors or devices). What you asking for is a feature offered by Garmin called Extended Display when bike computer serves as a remote display and controller for your watch. I haven't seen it on other platforms (although Wahoo possibly supports it, too).
