How do I edit my target goals?

How do I edit what my daily targets are, such as water consumption?  And what my step goals are, etc?  I want to personalize my goals and not just what the preset settings say I should be doing/

In the Fitbit app, click on your avatar (top left) to access your account and you should see “Activity & Wellness” under the Settings heading. You can modify your goals there.
