I think they are notifications on my charge 5 that signal that my heart rate hit a certain point, or I hit so many minutes, etc. but they are not intuitive and disruptive - I want to know my heartrate or the time, and I have to stop and fiddle with the watch to get the notification to stop.
How do I make them stop appearing?

It sounds like you want to turn off push notifications. This help page has the steps on how to manage Fitbit alerts (<-- click link).
For your heart rate notifications, follow the same steps in the above link to get to the Settings page. Tap Heart on the Preferences section and manage your heart rate alerts from there.

Thanks. The initial instructions don't apply to my version - for example, they say to tap the devices button and then tap Notifications, but there is no Notifications option on that page.
But hopefully I turned one of them off in the Heart Preferences page. We'll have to see next time I'm huffing and puffing. 😄 Thanks so much!

Thank you for your update. I see you were able to turn off the notifications for the Heart Preferences page.
Out of curiosity, which version do you have? The instructions that you refer to are for getting notifications from your phone to your Fitbit device.
Were you able to find the section for Push notifications? This is the page where you can turn off the notifications for step goal progress and exercise goal progress.
