I currently can only see the latest activity, I can no longer see all the different daily tracked activities on the app.
I used to be able to see all the daily activities by clicking on ‘Exercise days’ and when I click on it, the app freezes. I then need to restart the app.
Help please!

Have you tried uninstalling and re-installing the Fitbit app? If not, that's a good first step:
Although I'm not sure that this will help, you could also try clearing the storage for the Fitbit app on your phone.
Please let us know if these suggestions worked for you.
Update: By any chance, are you an iOS user? I see there are several threads where iOS users are reporting issues with syncing in the iOS forum (<-- click link)

I’m on iOS. The app syncs well, but I can only see the latest activity. I can’t go back to any of my past activities though.
I have tried uninstalling and installing again the app. I will try signing off first and follow your steps.
