Drat! I hate when I do something like that.
Not sure if this will work or if you've already tried this, but you might see if you can edit your sleep log to re-enter your sleep & wake times. If your Charge 5 still has your sleep data, it might restore your sleep score.

Thanks for your question about the inconvenience with your Charge 5.
Unfortunately, you can't recover the deleted sleep score, but you can edit it: If you edit a sleep log, for example, if you change the time you woke up, your sleep score adjusts accordingly. For more information on editing your sleep log, see How do I edit or delete sleep logs in the Fitbit app?
