If I need to get up during the night, when I check my sleep data on the morning it shows that I finished sleeping whenI woke up. It seems to not restart when I returned to bed. Any idea why?

I'd suggest checking and adjusting your sleep settings to get this issue fixed. To do so, just tap on the Sleep tile in your Fitbit app's Today page first. Next tap the gear icon in the upper right corner. Now you can set your sleep target as well as a sleep schedule.
You might also try to change the sensitivity for sleep tracking. To achieve this using an iPhone, just tap on your profile picture in the upper left corner of your Fitbit app's Today page, then Activity & Wellness >> Sleep >> Sleep Sensitivity where you can change this setting accordingly.
If you're using an Android phone, you have to do this using the Fitbit Dashboard:
There first tap the gear icon in the upper right corner, then select Charge 5 to get to your device's settings. Here you'll find options for sleep tracking. Tap on that to switch between sensitivity levels.
In either case don't forget to sync your Charge 5 with the Fitbit app to transfer changes you've made to your device.
