I registered my Fitbit with a Google email alias in the format "something+something-else[at]gmail.com" so why does it have to insist that I switch over to the root identity that this alias rests on? It's the same account after all.

Switching to use of a Google account requires you link it using your Google password.

Your existing Fitbit account, even though you used your Gmail e-mail address, had a password that's specific to Fitbit.com.
