My tracker only syncs with my phone if I'm on mobile data, gives me an error if I'm on wifi.

@sebastianPR There have been some issues with Fitbit's servers which have caused syncing problems. But currently the servers are up and running again. Do you still experience any problems in this regard?

It seems that the tracker only syncs if my phone is off the wifi.

@sebastianPR That's exactly what I've experienced a few days ago. Synchronization over mobile data was working.
If you have internet access over WiFi from other devices, you might have the problems reaching Fitbit's services I've mentioned above.
