Thank you for sharing your inquiry about the Premium membership.
The Premium membership will be available in your account regardless of the Fitbit device that you have set up, so you will continue to have a subscription if you set up your new Charge 5, since it's not linked to the Charge 3, but to the app. You can find more information about this here.
In order to activate the 6 month premium membership that comes with your Charge 5, you can cancel the current subscription that you have, and you should automatically see the free offer on the app. Your data will not be lost when you activate the free subscription.
Note that you can't connect multiple devices that use the Fitbit Gallery to one account. For Fitbit Charge 3, Fitbit Charge 4, Fitbit Charge 5, Fitbit Ionic, Fitbit Inspire series, Fitbit Luxe, Fitbit Sense, and Fitbit Versa series, only connect one of these devices to your account at a time.
