Why is there only like 4 exercises to choose from?

 

why isn’t workout one?

You can set 8 shortcuts (options/choices) on the watch from the 20 or so available on the Fitbit app.

@Jordanasaurus   Here is a link to the Help article you need.  How do I track my workouts with my Fitbit device?   There is a section that describes how to edit your exercise shortcuts.
