Why is it not possible to download health metrics in a manageable format?

I want to analyze my HR and HRV data over the past 2 1/2 years but the only way to download these 2 variables is to download all of my data and it can only be exported in individual daily csv files instead of one spreadsheet. There is no option to select only the variables needed or to export into a spreadsheet which would facilitate analysis. Why do we pay $160 a year a subscription and can't even download data in a useful format?
