I’ve recently got the new Fitbit 6 and I’m running the same time and distance as I usually would yet my speed and distance is less.
I am tall and have checked my height measurements are still in the app which they are.
Can anyone explain the discrepancy?

To improve accuracy on distances traveled while doing a walking or running exercise, Fitbit uses your stride length. Distance then is calculated as Steps x Stride Length.
You can have your stride length set either automatically by using GPS for a period of time, or you set it manually as mentioned here:
