Do I need Premium to see the sleep stages along with the score?

On the app Today page,

scroll down to Sleep Duration - tap it - scroll down to desired night - tap it - scroll down to see metrics. (Stages and score).

On the web dashboard,

hover mouse over Sleep widget - select more (at the bottom) - select desired night. (Stages but not score).
