I’m looking for a device to give me some insight in my insomnia, but one thing I don’t want is to be able to see the time every time I wake up or lay awake. Is it possible to turn the screen completely off on the Charge 6?

Consider setting up bedtime schedule in your Fitbit app as @LZeeW suggested. This way, your Charge 6 display will not turn on until you double tap the screen during your bedtime. The display will go back to turning on normally when your bedtime mode ends or when you turn off bedtime mode if you get up before your scheduled wake time.
