My fitbit app doesn't show a detailed analysis of my sleep stages or a sleep score.

Are you seeing your heart rate being tracked? Do you see a green light on the back of your Charge 6? The green light is the heart rate sensor & is used for sleep tracking.
If you don't see the green light, the first troubleshooting step is to check the Settings tile on your Charge 6 to make sure Heart rate is turned on:

Hello,
I can see green light on the back of my watch.
My app is showing the resting heart rate but not breathing rate or heart rate variability.

I am now on my second Charge 6, having replaced my generally reliable Charge 5 when it became unreliable. All units three have the same issue, Breathing Rate erratic (mostly no data), and no Heart Rate Variabilty data, so no or erratic sleep stages/score. I cannot recall if there was a software update just before the Charge 5 went AWOL, but three sepatate units developing the same fault points to a software fault to me. It could, of course, be me, but I have been receiving Health Metrics, including Sleep Stages/Score reliably for a long time and I have followed the support team advice religiously. Something is definitely wrong.

Honestly I am at a loss with it all and really disappointed. I moved from a relatively good and reliable Garmin watch and regretting it now. Such a shame.

One troubleshooting suggestion that I can think of is to try cleaning the back of the Charge 6 around the sensor area. This help page has the steps on how to clean a Fitbit device (<-- click link).
Another suggestion is try moving the tracker to the inside of your wrist. Some users report that they get better sleep tracking when they move the tracker to the inside of their wrist.
