I’m currently travelling in the Caribbean but needed to use a VPN to access UK websites whilst away.
I’ve turned off the VPN but there seems to be an ongoing issue with the FitBit location and timezone. If I set it automatically it sets the location as “United Kingdom” and the timezone as “Etc/UTC (GMT). I can override the location manually but the timezone just keeps reverting back to Etc/UCT (GMT) even though it’s set to manual.
I’ve tried rebooting the app, deleting and redownloading the app and rebooting my phone. None of this has fixed it.
while searching the forum I’ve come across other examples where a VPN might cause an issue but no actual solutions. Any suggestions on how to proceed?

I don't see where you're getting your information about a VPN contributing to your issue. I've been on 40 cruises, at least half of which I've had a Fitbit with me, and at least 10 of which I've used VPNs for the entire trip. All but one of those have been to the Caribbean (the remaining one was to Europe) and not once have I even come close to an issue of the VPN interfering with the time zone.
I have mine set to Automatic Time Zone if that makes a difference.
Just coming back to add that the VPN only disguises the website IP address on your phone. It doesn't interfere at all with the time zone in which your phone is set. The Fitbit is tied to the phone, which is tied to whatever time zone your phone is physically in, The phone, in turn, is tied to whatever local towers it has access to.
