Ideally what I'd like is something I can set alarms on, and I would use it at night, in airplane mode, to have an alarm to wake up in the morning. During the day, I'd keep it connected to my phone for notifications. I'd love to set up reminders for water and movement. Ideally I'd love if it could do sleep tracking. My main priority would be that I can put it in airplane mode at night, is there a Fitbit model you can do that on?

Although there isn't an "airplane mode", the Charge 6 has Quiet modes: Do Not Disturb (DND) and Bedtime mode. With Bedtime mode, you set a schedule so that:
You'll set up your device to give you a reminder at 10 minutes before the hour to move, if you haven't completed at least 250 steps. Currently, there isn't a reminder to drink water.
You'll be able to track your sleep. It will take at least 3 nights of wearing the device to get your sleep data, like hours slept and sleep stages. If you stay with the Premium subscription, you'll see more details about your sleep.
Although I haven't used it, there is an option to set alarms.

I realize that you posted your query in the Charge 6 forum. You might want to check out the current Fitbit lineup and see which device appeals to you.
Just an FYI - new Fitbit users are required to use a Google account. If you already have a Google account, you're all set.

@jude471 Like @RiekoC wrote, you posted in the Charge 6 forum, but the Charge 6 has hardware (ECG app and electrodermal scan for stress response) the you don't seem to want. The two trackers that best fit your needs are the Luxe and the Inspire 3. I also want to point out that the alarm is a vibration alarm. Some users of all models write that the vibration doesn't wake them.
