These are my favorite salads which I make it every week. I just want to share this with you.
Simple Quinoa Salad:
Ingredients:
1 cup quinoa
1 red/yellow/orange pepper
1 green onion
½ cup of dried fruits (cranberries/Apricots/Raisins)
1 tbsp of chopped mint leaves
Olive oil, lime juice, salt and pepper for dressing
Toast the quinoa in dry pan and cook for 20 mins. Combine all the veggies, quinoa and dressing. Can serve immediately or refrigerate.
(I found there is a lot of difference in taste when you toast. I like that nutty flavor).
And here is another one!
Asian Quinoa salad
Ingredients
1 cup quinoa
1-2 cups shredded red cabbage
1 red/orange bell pepper
1 carrot, shredded
1 cucumber, chopped
1 cup frozen edamame, thawed
2 green onions, chopped
3 limes, juiced
1 tablespoon freshly grated ginger
1 teaspoon sesame oil
pinch of crushed red pepper flakes (optional. if you want to add heat)
½ cup chopped peanuts
½ cup chopped cilantro
¼ cup chopped basil
Rinse the quinoa under cold water and cook in a medium saucepan for 20 mins. (I add 1 - 2 ratio of Quinoa - water) Remove from pan and let cool.
Add the quinoa and vegetables to a large bowl. In a small bowl, whisk the limes, sesame oil, grated ginger and red pepper flakes. Taste for heat and add more if necessary. Pour the dressing over the quinoa and vegetables and stir to combine. Sprinkle the cilantro, basil and peanuts over the salad and stir lightly. Make it sit for at least 30 mins so that all the flavor get infused and then serve.

These sound delicious. I tend to just add whatever veggies I have on hand. I'll try these.
