I´ve looked around a bit, but haven´t found any aviation related apps for the fitbit Ionic, for example a combined app for altimeter, weather, speed etc or other flying related fonts. Does anyone know if this is something that will be implemented in the app gallery? Or is anyone in the works of creating one? Would gladly like to know.

I've checked the list of the apps implemented, but at this time there's only the one named "Altimeter" by Marco Castiello. Have you tried it? It's pretty cool.
I've also checked if there's someone already on the move in creating this great app but, not so far. So, the best place to make your voice heard is the Feature Suggestion board on our community, which our product development teams consult regularly to ensure we're delivering on what our customers need and want. Please take a moment to visit and give us your feedback.
Our product team, community members, and developers look forward to reading and incorporating your suggestions into future versions of Fitbit trackers and apps.
